Julie's Favorite Desserts

Pumpkin Cookie Ingredients:

  • 2 cups canned pumpkin
  • 1 and 1/4 cups brown sugar
  • 1 and 1/4 cups white sugar
  • 4 cups flour
  • 1 and 1/4 cups butter
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1 teaspoon salt
  • 2 large eggs

Optional Ingredients
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon cloves
  • 1/2 teaspoon more cinnamon
  • 1 generous handful of oatmeal
  • nuts and raisins


Preheat oven to 350°
Combine the flour, baking soda, baking powder, cinnamon, and salt.(Add additional ginger, cloves, cinnamon,and/or oatmeal to this mixture) Set aside. In a large bowl, mix pumpkin, butter, white sugar, brown sugar, eggs, and vanilla until thoroughly mixed and creamy. Slowly add the dry ingredients into the pumpkin mixture and stir until throughly blended. If adding nuts or raisins do so now.

Spoon dough onto lightly greased baking sheet. Leave space between each cookie to allow for them to spread out as they cook. Bake for 15-20 minutes or until golden brown. Place on wire rack to cool.
