Chocolate Pudding Pie Ingredients:

  • 3/4 cup sugar
  • 2 tablespoons cornstarch or 1/4 cup all purpose flour
  • 2 and 2/3 cups milk
  • 4 beaten egg yolks
  • 1 cup sugar
  • 1 tablespoon margarine or butter
  • 1 and 1/2 teaspoons vanilla

In meadium sauce pan combine sugar and cornstarch/flour.
Stir in milk.
Cook and stir over medium heat until mixture is thickened and bubbly. It is important to stir continuously to prevent mixture from burning to the sauce pan.
Cook and stir an additional 2 minutes after mixture is thick and bubbly.
Remove from heat.
Gradually stir 1 cup of the hot mixture into the beaten eggs.
Return egg mixture to sauce pan.
Bring to a gentle boil.
Reduce heat. Cook and stir for 2 minutes.
Remove from heat.
Stir in margarine/butter and vanilla.
Pour pudding mixture into pie crust.
Cover surface of pudding with plastic wrap to prevent skin from forming.
Chill pie in refrigerator to set.

My family has used this recipe from "Better Homes New Cook Book" since I was a little girl. My Grandmother and Mom added a meringue to the pie, but I feel the pie is perfect without.
